This recipe is almost too easy. I make this when I don’t feel like cooking. The trick here is to take your time to let the onion become soft and let its sweet flavour go into the sauce.
Peel and then cut the onions into halves, so half globes, no finer.
In a cooking pan heat the coconut oil until soft, then add the onions and tomatoes. We don’t want to bake the onion. Add some salt and pepper.
Heat this until it cooks, then let it simmer for 45 minutes, stirring every 10 minutes.
After 45 minutes start cook the pasta following the instructions on the packet.
Turn off the heat under the tomatoes, scoop out the onion parts and put them in the compost.
Add the pasta to a plate, generously pour over the tomato sauce. Top it off with some torn basil leaves and yeast flakes.
